Ezousa is a new winery, established in 2003 by a young professional, passionate about producing quality wine in his homeplace. Michalis Constantinides is a young man who studied Chemical Engineering at Athens Polytechnic, with specialization in Foods and Drinks and the Environment, and then did postgraduate work in Business Administration. He comes from a family of winemakers who enjoyed the process but, rarely if ever developed their hobby into a marketable product. Mr. Constantinides abandoned his promising career with the Environmental Service of the Cyprus government, in order to set up a winery at Kannaviou, a village located 25 km from Paphos town, in the heart of rural Paphos and a place where vines and wine making are deep rooted activities. The winery grows its vines in a land of 4 hectares at an altitude of 400m. Production from these grapevines cover about 40% of the winery’s requirements. The balance of the grapes needed to produce the 50,000 bottles of wines per year, come from another nine growers in the Kannaviou – Panayia area with whom there is a close relationship that involves advice and quality control in the cultivation processes. Two of the wines are produced from the indigenous white Xynisteri and the red Maratheftiko. The other two wines are made from Cabernet Sauvignon and from a careful blend of Mavro, Cabernet Sauvignon and Mataro varieties.
